Pete and I have been on a health kick lately and we have been very careful with the food we eat. Lots of green vegetables and fruit every dinner! Pete outdone himself lastnight though, he knew I have had a strong craving for carbonara sauce but it was far too fatty for our new diet.
He surprised me lastnight with this healthy dish! It is hollandaise sauce (no cream) with little bits of chicken and broccoli. It was toe curling good! I married a genius!
Feeling so much better with this healthy lifestyle, lost a bit of weight AND my complexion is improving with all the healthy greens we are eating!

The sauce (a modified hollandaise).
Ingredients:
- a cup or two of warmed milk,
- a little butter (optional and to taste),
- two or three egg yolks,
- a little vinegar or lemon juice and
- salt and pepper.
Method:
- Warm milk and set aside, melt in butter if desired. Normal hollandaise doesn’t use milk at all but melted butter instead.
- Add one or two (to taste) tea spoons of lemon juice or vinegar to season the egg yolks.
- Either use a double boiler to heat the egg yolks, or if your braver, heat it over direct heat. Add the warmed milk slowly, waiting until the desired thickness is achieved before adding more.
The double boiler will obviously be much slower but is easier. This sauce should be smooth so make sure you don’t scramble the eggs. If you don’t use a double boiler make sure a bowl of cold water is on hand to quench the sauce pan when you’ve finished to stop the eggs from over cooking.
