Healthy carbonara

Pete and I have been on a health kick lately and we have been very careful with the food we eat. Lots of green vegetables and fruit every dinner! Pete outdone himself lastnight though, he knew I have had a strong craving for carbonara sauce but it was far too fatty for our new diet.

He surprised me lastnight with this healthy dish! It is hollandaise sauce (no cream) with little bits of chicken and broccoli. It was toe curling good! I married a genius!

Feeling so much better with this healthy lifestyle, lost a bit of weight AND my complexion is improving with all the healthy greens we are eating!

Here is the recipe if you want to try it out!

The sauce (a modified hollandaise).

Ingredients:

  • a cup or two of warmed milk,
  • a little butter (optional and to taste),
  • two or three egg yolks,
  • a little vinegar or lemon juice and
  • salt and pepper.

Method:

  1. Warm milk and set aside, melt in butter if desired. Normal hollandaise doesn’t use milk at all but melted butter instead.
  2. Add one or two (to taste) tea spoons of lemon juice or vinegar to season the egg yolks.
  3. Either use a double boiler to heat the egg yolks, or if your braver, heat it over direct heat. Add the warmed milk slowly, waiting until the desired thickness is achieved before adding more.

The double boiler will obviously be much slower but is easier. This sauce should be smooth so make sure you don’t scramble the eggs. If you don’t use a double boiler make sure a bowl of cold water is on hand to quench the sauce pan when you’ve finished to stop the eggs from over cooking.

Pete’s Amazing Pizza

My Pete it seems is a man of many talents. He decided to make Pizza today for dinner and this was what it looked like..

It was dripping with cheese, Parmesan and blue.

There were slices of chicken breasts, mushrooms and sweet red pepper sprinkled to overflowing all over the pizza.

The pizza base had yummy herbs in it and was heavenly crunchy in the right places…

Cheese dripping all over your chin and hands as you take that first heavenly bite..

Yummy….

Now here is the recipe.

Ingredients

Pizza Dough
150gm plain flour
1/2 packet of 11gm yeast
teaspoon of salt
teaspoon of sugar
desert spoon of olive oil
3/8 of a cup of water
teaspoon of dried rosemary

mix together and leave to rise as instructed on yeast packet. Spread over pizza tin.  Dust with flour before baking to make it look pretty. Blind bake the base for 3 mins and turn the base over to cook the other side at high temp about 250 degrees celsius.

Tomato sauce recipe
1/2 tin of best quality stewed tinned tomatoes
1/2 chopped onion
2 teaspoons of vinegar
basil

Fry onions then vinegar then tomatoes and basil.

Toppings
chicken breast fried
young swiss cheese
blue cheese
mushrooms
red peppers
*This changes with what we have in the fridge..

Spread tomato sauce liberally over base then spread the toppings over that. Bake on hottest temperature possible about 8 mins at 250degrees celsius (also can try grilling)
